Weekend picnic treat: creamy yogurt pudding

This light, lemony dessert has just the right balance between tartness and sweetness

Serves 4-6


• Juice of ½ lemon

• 500g full-cream Greek yogurt

• 200g sweetened condensed milk

• 1 tsp vanilla essence

• Grated chocolate


1 In a large bowl, beat the lemon juice into the yogurt until well mixed. Stir in the condensed milk and vanilla essence.

2 Spoon the mixture into a plastic container and refrigerate for half a day or until it has set.

3 Pack the container in a cool bag and serve the pudding in plastic cups at the picnic site. Scatter grated chocolate on top.

Tip Alternatively, spoon the mixture into ready-made tart shells and put them in the fridge until the filling has set.
